Crispy Roast Potatoes

This is the perfect side dish for Thanksgiving, Christmas or any other occassion

Equipment

  • 1 Baking Tray
  • 1 Colander
  • 1 Drinking Glass

Ingredients
  

  • 600 g Charlote or Baby Potatoes
  • 1/4 cup Chopped Sage
  • 2 tbsp Thyme
  • 2 tbsp Vegan Butter
  • 3 tbsp Vegetable Oil
  • 1 tsp Salt
  • 1 tsp Peper

Instructions
 

  • Wash potatoes
  • Cook potatoes until soft
  • Strain potatoes and add to oiled baking tray
  • Add herbs, salt and pepper
  • Melt butter and pour over and shake up the tray. At this point, do not worry if the potatoes break up as this is exactly what we want
  • Bake potatoes for 25 minutes, take them out and press them down with a glas
  • Bake potatoes for 20 more minutes or until golden brown
  • Serve with fresh herbs on top
